‘Happy Makar Sankranti’ greets us from top of this morning’s copy of the Times of India. There are so many festivals in India, regional and national, that it is hard to keep up with which God’s birthday it is or why there are huge colourful tents in the middle of the streets. Today it is like New Years Eve, with many rituals and celebrations to carry out and enjoy. In Rajasthan they give out ‘Caiver’ a very special type of spongey, fried cake. Crispy around the edges and chewy in the middle. In fact it looks alot like a disc shaped flat sponge (with a hole in the middle). You can see the men pouring thing streams of batter into circular frying pans throughout the day, it looks like a labour intensive way of making a cake.
